Ingredients:

- 1 can (15 oz) chickpeas, drained and rinsed

- 1 large onion, finely chopped

- 2 carrots, diced

- 2 celery stalks, chopped

- 3 cloves garlic, minced

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 teaspoon smoked paprika

- 1/4 teaspoon cayenne pepper (adjust to taste)

- 4 cups vegetable broth

- 1 can (14 oz) diced tomatoes, undrained

- 1 cup spinach or kale, chopped

- 2 tablespoons olive oil

- Salt and pepper to taste

- Fresh parsley, for garnish

- Lemon wedges, for serving

Instructions:

1. Sauté Aromatics:

Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery. Sauté until vegetables are softened and onions are translucent, about 5 minutes.

2. Add Garlic and Spices:

Stir in minced garlic, ground cumin, ground coriander, smoked paprika, and cayenne pepper. Sauté for an additional 1-2 minutes until fragrant.

3. Simmer Chickpeas and Broth:

Add chickpeas, vegetable broth, and diced tomatoes (with their juice) to the pot. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15-20 minutes, allowing the flavors to meld together.

4. Blend for Creaminess (Optional):

For a creamier texture, use an immersion blender to partially blend the soup while leaving some chickpeas and vegetables whole. Alternatively, transfer a portion of the soup to a blender, blend until smooth, and return it to the pot.

5. Add Greens:

Stir in chopped spinach or kale and let it simmer for an additional 5 minutes until the greens are wilted.

6. Season and Serve:

Season the soup with salt and pepper to taste. Ladle the soup into bowls, garnish with fresh parsley, and serve with a wedge of lemon on the side for a burst of citrusy freshness.

7. Enjoy:

Dive into a bowl of this easy chickpea soup, reveling in the warmth, heartiness, and flavorful goodness. Pair it with crusty bread or a side salad for a complete and satisfying meal.

This easy chickpea and vegetable soup is not only a breeze to make but also a delightful way to incorporate the goodness of chickpeas into your meals. It's perfect for a cozy weeknight dinner or a quick, nutritious lunch.
