Total Time:
30 minutes
2 (6-ounce) boneless, center-cut filet mignon steaks, about 1 inch thick
1 tablespoon olive oil
1/4 cup butter
1/4 cup dry white wine
1 tablespoon Dijon mustard
1 tablespoon chopped fresh parsley
Salt and pepper to taste
Instructions:
Season the steaks with salt and pepper.
Heat the olive oil and butter in a large skillet over medium-high heat.
Add the steaks to the skillet and cook for 3-4 minutes per side, or until cooked to desired doneness.
Remove the steaks from the skillet and set aside.
Add the wine to the skillet and bring to a boil.
Reduce the heat to low and simmer for 2-3 minutes, or until the sauce has thickened slightly.
Stir in the mustard and parsley.
Return the steaks to the skillet and cook for 1-2 minutes, or until heated through.
Serve immediately.
Tips:
For a more flavorful steak, marinate the steaks in a mixture of olive oil, lemon juice, and herbs for 30 minutes before cooking.
If you don't have dry white wine, you can substitute chicken broth or vegetable broth.
To make the sauce ahead of time, simply cook the wine and mustard in the skillet until thickened, then remove from the heat and stir in the parsley. When you're ready to cook the steaks, reheat the sauce and add the steaks.
Serve the steak with your favorite sides, such as mashed potatoes, roasted vegetables, or a salad.
