Ingredients:
1 pound boneless, skinless pork shoulder, cut into 1-inch cubes
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup apple cider vinegar
1/4 cup water
12 corn tortillas
Your favorite toppings (see below for suggestions)
Instructions:
Heat the olive oil in a large skillet over medium heat. Add the pork and cook, stirring occasionally, until browned on all sides.
Add the onion and garlic to the skillet and cook until softened, about 5 minutes.
Stir in the cumin, chili powder, salt, and pepper. Cook for 1 minute more.
Add the apple cider vinegar and water to the skillet. Bring to a boil, then reduce heat to low and simmer, covered, for 2 hours, or until the pork is tender and shreds easily with a fork.
Shred the pork with two forks and set aside.
Warm the tortillas according to package directions.
Fill the tortillas with the pork and your favorite toppings.
